Immerse in Amro's aromatic world of fresh brews, let flavoursome concoctions reside in your memory.

Every manual brew at Amro starts with single-estate Mandal Khan beans. We brew them four ways — Aeropress, pour over, French press and syphon — because a two-minute steep and a slow gravity pour taste like two different farms. Cold brew steeps overnight; cascara, the sun-dried husk of the coffee cherry, sits three minutes in hot water.

The pâtisserie is run like a French kitchen. Van Houten chocolate at 35.6% and 46.5%, Lotus Biscoff pressed into cheesecake bases, mascarpone in the tiramisu, tres leches soaked in three milks. Breads are shaped and proofed each morning — sourdough in plain, carrot-raisin, rosemary and aloo, beetroot and black sesame — for the loaf on the counter and the sandwich on the plate.

Manual brew

Four ways to pour.

Same Mandal Khan beans, four extractions. Pick by the time you have — two minutes, three, four, or a small piece of theatre.

    Cup resting on fresh coffee grounds

    Aeropress

    2 min

    Steeped for two minutes, then forced through a filter by pressing the plunger through the tube. We recommend our Mandal Khan single-estate coffee for this technique.

    Slow pour over into a glass carafe

    Pour Over

    3 min

    Hot water poured over the grounds seeps through under gravity, absorbing the coffee's oils and essence — a clean cup collected in the carafe.

    Pressing freshly ground coffee

    French Press

    3–4 min

    Coarsely ground coffee in the beaker, water at 85–90°C, about 10 g of grounds to 180 ml of water. Three to four minutes of brewing.

    Steaming glass brew

    Syphon

    Theatre

    Two chambers — vapour pressure and vacuum — brew the coffee in what is also known as a vacuum pot.
